Serving cocktails made with sustainable vegetables grown in water chestnut compost [THE BAR]

Mitsubishi Estate Hotels & Resorts is selling an original cocktail made with sustainable vegetables (onions) grown with compost derived from water chestnuts in the moat of the Imperial Palace Outer Gardens, exclusively at four hotels under the iconic brand.
The name "KNOT" was created by combining the initials of the four iconic hotels of the brand (Kyoto (K), Nagoya (N), Osaka (O), and Tokyo (T)), and the overall theme of the hotel is "Tie a KNOT," reflecting the hotel's desire to be a "knot" that connects cities and rural areas, and people to people.
THE BAR at the iconic Kyoto location offers cocktails paired with gin.

This year, we will once again share the fruits of this project, which connects urban and rural areas with the people involved in the environmental restoration of the Imperial Palace Outer Garden moat, an oasis in the city center, the farmers who grow vegetables with a focus on soil and fertilizer, and the bartenders who transform these into delicious cocktails.

Enjoy a sophisticated and sophisticated time with a special cocktail carefully crafted by our bartenders.

A modern reimagining of the Standard cocktail "Gibson."
We carefully dried onions and soaked them in gin to create a fragrant flavored gin.
It is then shaken with dry vermouth, and the flavors of the gin and onion combine to create a deep, rich taste.
