One of the main dishes, "San'in Offshore Flathead Flounder Meunière with Celery Root Sauce," is a fatty, thick, mild-flavored dried flathead flounder caught off the coast of San'in, prepared as a meunière and paired with a rich celery root sauce.
Additionally, Omi duck thigh meat is carefully confited and served with a soup of Iberico chorizo and leeks, infused with umami, as a sophisticated dish that exudes French esprit.
