The goût of L'été

Our signature terrine features juicy tomatoes and watermelon, carefully encased in a tomato extract infused with the umami of kelp, resulting in a flavor that is both light and complex, perfect for summer. The richness of sautéed Sainte-Maure cheese complements the refreshing taste, leaving a pleasant aftertaste.

One of the six main dishes to choose from is "Pan-fried Pike Conger with Plum Butter Sauce." Pike conger, a popular summer delicacy in the Kansai region, is pan-fried to perfection and topped with the rich flavor of butter and the tartness of pickled plums. This dish expresses the combination of pike conger and plum, deeply rooted in Japanese food culture, using French techniques.

For dessert, we offer crème brûlée, where the subtle bitterness of matcha enhances the rich sweetness. The refreshing aroma of matcha that fills your senses beautifully connects the memories of your summer dinner.
