Soup and cocktails made with vegetables grown in water chestnut compost are served.

Soup made with sustainable vegetables (corn and onions) grown with compost derived from water chestnuts in the moat of the Imperial Palace Outer Gardens will be served at 14 Royal Park Hotels.
In addition, original cocktails incorporating onions will be sold exclusively at the four iconic brand hotels.

This year, we will once again share the fruits of this project, which connects urban and rural areas with the people involved in the environmental restoration of the Imperial Palace Outer Garden moat, an oasis in the city center, the farmers who grow vegetables with a focus on soil and fertilizer, and the chefs and bartenders who transform these into delicious soups and cocktails.

Soup made with sustainable vegetables

Corn and onions grown in the Yatsugatake Mountains are cooked in a way that brings out the sweetness and flavor of the fresh corn and onions while they are still fresh, under the supervision of the group's Executive Chef, Masaki Matsuyama, and are then turned into soup.

Fresh corn, delicious even when raw, is made into a refreshing chilled soup. The slight saltiness brings out the sweetness and umami, and the corn is deliberately left whole to create a smooth texture, allowing you to enjoy the natural sweetness of the ingredients.

Onion soup

This warm soup not only allows you to enjoy the sweetness of onions, but also the deep richness and aroma that is brought out by adding butter and sautéing.
It's a comforting taste that seeps into your body and soul.

Sustainable vegetable cocktails

"KNOT" is an abbreviation of the initials of the four iconic brand hotels (Kyoto (K), Nagoya (N), Osaka (O), and Tokyo (T)), and the overall theme is "Tie a KNOT," reflecting the desire to be a "knot" that connects cities and regions, and people to people. Mitsubishi Estate Group's sustainable initiatives utilizing resource recycling

Since 2017, the Mitsubishi Estate Group has been collaborating with the Ministry of the Environment's Imperial Palace Outer Gardens Management Office on the "Moat Project," an initiative aimed at restoring the waterside ecosystem and preserving biodiversity in the Imperial Palace Outer Gardens moat in Marunouchi, Tokyo.
Since 2019, the company has been composting the waterweed "Hishi" (water chestnuts) harvested during the Ministry of the Environment's maintenance of the Imperial Palace Outer Garden moat, and working with organic farmers in Yamanashi Prefecture, the company has cultivated vegetables using this compost, which are then used as ingredients in the cafeteria at Mitsubishi Estate's headquarters, among other places, building a resource circulation system that connects urban and rural areas.
