前菜の「ホタルイカとそら豆のセルクル仕立て アサリのソース」は、初夏を思わせる彩り豊かなグリーンのクスクスに、ホタルイカやそら豆など旬の食材を合わせました。
泡状に仕立てたアサリのソースが、見た目にも味わいにもアクセントを添える一品です。
「シラスと魚介ラグーのトマトスパゲッティーニ」は、トマトベースのパスタにシラスと大葉を合わせた、爽やかでバランスの取れた味わいに仕上げました。
